Fruity Chicken Salad

This recipe has evolved over time as I have tried many different ingredients.  One reason I love chicken salad is that it tastes good with all sorts of things in it.  I can almost always raid my produce drawer in the fridge and come up with something delicious.  But, this is our favorite. My kids devour it.  In fact, since I made it this morning, Mercy has eaten two bowls of it.  Good thing it is pretty nutritious.  🙂

I usually like to cook my chicken in the crock pot over night, only because it is easy and shreds nicely when cooked this way.  But, boil it, cook it in the oven, on the stove. . . whatever you like.  Then shred it up.  Dump in the other ingredients and enjoy! Don’t worry if you are missing one of the ingredients. It will still taste great.  This time  I was out of grapes so I just left them out.  But, if possible, make sure to include the orange zest.  It is the “secret” weapon.  whenever I serve this, people love the citrus in it.

Ingredients:

2 heaping cups shredded chicken

1 medium apple, diced into small pieces

2 ribs of celery, diced into small pieces

1 cup of chopped grapes (i cut each grape into quarters)

zest of 1 medium orange

3/4 cup of mayo

1/2 cup chopped walnuts (if you have time to toast these, do it! but if not, still very tasty )

1/2 tsp salt

pepper to taste

Combine all the ingredients in a bowl and stir to combine.  Serve any way you like it! We eat it over a bed of spinach or mixed greens with a little bit of poppyseed dressing,  on sandwiches, wrapped in a tortilla, or just plain.
